Date Nut Pinwheels

Hesaki-san. Date Nut Pinwheels are rather complicated, but interesting. They are a rolled refrigerated cookie. First you make the cooked filling. While the filling is cooling, you make the dough. Then you make the roll and refrigerate. (This part is difficult and I'll help you.) Then, with Naomi-san, you make her chocolate chip cookies. After that, your cookies will have been refrigerated for about two hours, you can cut and bake the date nut pinwheel cookies. Good Luck. I'll help you. It will be fun.

DATE NUT REFRIGERATED PINWHEEL COOKIES

DOUGH:
1 c. butter
1 c. brown sugar 1 c. white sugar 4 1/2 c. flour 3 eggs 1 tsp. soda 1/4 tsp. salt 1 tsp. vanilla
FILLING:
1 lb. cut up pitted dates
1/2 c. water 1/2 c. white sugar 1 c. chopped nuts
Before you make the dough, get filling ready so it can cool. Add
all ingredients of filling together. Bring to a boil. Let it
boil gently for 5 minutes, do stir. Take off burner and let
cool.
To make dough: Combine sugars and butter until creamy. Add eggs and beat until all blended. Sift flour, salt and soda and add to first mix, add vanilla. Take a big piece of wax paper, add some flour, put dough mix on it and mix to flatten. Put another sheet of wax paper over and roll as for jelly roll. When date mix is cooled, spread on dough and roll up like a jelly roll. Refrigerate for a couple of hours and slice. Bake 325 to 350 degrees for approximately 10 minutes. |
